Dinner at Rake's

My family requested fish. I didn't argue and as Candystick and I shopped for groceries on Saturday, Candystick and I picked up a few things for a good fish dinner. I mentioned this a couple of post back. Walmart has frozen wild salmon fillets. Trying to look up the specifics of the Salmon on the Internet, I only came across this Walmart statement. Here:

I decided to take you (my readers) along for Dinner at Rake's. Cinderella laughs at me as I come up with these ways to open our lives to all the world. (or the few faithful readers)

Let's get the basics:
4 Salmon Fillets
1 Cup of rice
2 chopped carrots
1 sliced zucchini
1 stalk of broccoli
5 stalks of asparagus

3 tablespoons of vegetable oil
salt, pepper and garlic salt.

Once I get all this laid out, Daisy our cat was at my feet meowing and meowing.


If you don't have a vegetable steamer - Get one. This is the best way to cook vegetables. Candystick even eats her vegetables when prepared this way.



I started the rice first. After about 5 minutes I started to heat the water for the vegetables and oil for the fish. Once the water was boiling, I lowered the vegetable steamer into the pot. Then I placed the fillets in the pan.

Now we are cooking.



The rice cooked for 15 minutes then set to the side for another 5 Minutes.
The vegetables steamed for a little more than 5 minutes. Vary this time to suit your taste. My family enjoys a more softer steamed vegetable. The fish fries for about 5 to 7 minutes. Then you serve.

A healthy meal for 4 (we have 3) in under 30 minutes and less than $10.

I've got one of those steamers, but they are a pain to clean!

Along the dinner at Rakes theme, you should post about your cracker-chili thing.

For those that don't know. I fill my bowl full of crushed crackers before pouring chili into it. I then soak it with Texas Pete sauce and sometime mustard. I do like a dry chili.

I will post on it soon. We still have leftovers frozen from when Roadrunner visited us for Chili night at Rake's.
